Nacho Manzano, the village chef

Following the success of the meals already presented by Dani García, Ángel León and Quique Dacosta in Iberostarchef on Tour 2014-2015, the Iberostar Bávaro is set to receive a visit from Nacho Manzano on March 13. He is targeting a menu with which he hopes to be able to transport the diners to his native region of Asturias (Spain) with typical flavors and aromas from the zone.

Nacho Manzano is considered one of the great emerging talents of Spanish gastronomy. Holder of two Michelin stars, his creations unite refined cuisine d'auteur with the tradition of his roots. The result is an amazing fusion of unique flavors.

Nacho Manzano's cuisine is one of origins and memory; one in which his roots both personally and gastronomically mark out the path he has taken. He is loyal to tradition without renouncing modernity, a chef for whom both flavor and textures are fundamental, as is the high-quality end product – a product he seeks out, tests and selects as the basis of a gastronomy with its own character, in which it is possible to savor Asturias crossing only the border of a plate.

An admirer of all styles and trends (because he firmly believes that cuisine is so broad and plural that all that is good and done with the due precision will always have an important place), he is proudly known as "the village chef" – a village which, for him, is home (gastronomically-speaking and literally) and the starting point, for example, of his current creative culinary period: the summary of the Asturian landscape through flavors as seemingly different as those of game and seafood.

The menu chosen by the prestigious chef for the meal in the Iberostar Grand Bávaro, in the Dominican Republic, on March 13 is as follows:

Cider cocktail

Casa Marcial croquette

Homage to tomato with pearls of white garlic

Squid in its broth with dyed scallions

Cod fish maw with pepper broth and lentil sprouts with cumin

Poached and crunchy bacon with fabada (Asturian bean stew) vinaigrette

Salmon in its habitat

Shin of beef

Rice pudding

Chocolate salad with a cider vinegar slush
